Extreme Makeover: Little Miss Edition

It was a year ago last week that we finally moved into our house. Maybe I should be a little embarrassed to admit that, in that time, we've only completed one room. By "completed" I mean, painted, accessorized, and achieved it-will-be-this-way-for-years status. But honestly, I'm not that embarrassed to admit it. This is our long-term home, so we are taking our time to make each room the way we want it. Plus, we've chosen to do other things with our time and money in the last year that will create lasting memories for our kids (Disney World, traveling to see family, play dates with friends, etc.)

I am so excited, however, that we did get Little Miss's room done. We did the bulk of the work last fall, but I just finished the last touches a few weeks ago, so now I can finally post pictures! To truly appreciate it, you need to see the before  picture....

a room fit for a princess!

Of course, every princess needs a canopy bed...Little Miss's favorite part.

My favorite part are the little accents, like this great picture we found at Hobby Lobby.

Or these adorable letters that spell her name. Hubby glued them to circles
we had painted to match her bedspread....so cute!

The little flower hooks are perfect for keeping her necklaces organized.

I also love her little "workstation" (which will come in so
handy in a few years when the homework comes more steadily!)

The green chair is my proudest accomplishment...a $16 find at a local flea market, plus a couple coats of paint, and voila! (It may sound simple, but trust me...refinishing furniture is not my forte, so I was very pleased with how it turned out!)

I must admit I was surprised by how "grown up" her room looked when we were finished. I was a little sad that she passed right over all the pastel and princess stuff when we were shopping. (I had to talk her down from hot pink and zebra stripes!) But I'm thankful that this room will last awhile (at least through jr. high, and maybe through high school!). Plus, I love all the color and the creative little accents...it's so Little Miss!

Easter 2012

Although we missed being with family this year for Easter, we took full advantage of the nearly-perfect weather and had a fantastic weekend. Here are just a few highlights:

It was a beautiful Easter weekend in the Ozarks!

Saturday our church held a community-wide indoor Easter Egg Hunt.

Besides hunting eggs, there was a petting zoo, crafts, and of course face

painting where both kids were transformed into adorable little bunnies.

Little Man got to play firefighter and hang out inside a real-life fire truck
(and an ambulance, school bus, semi-truck, and police car. The boy was in heaven!) 

Little Miss was happy with the photo op :)

 Of course there was the customary dying of eggs

We finished the weekend with a backyard egg hunt (the fourth

egg hunt of the weekend!). Unfortunately, it was interrupted
by a wasp sting. :( We managed to find all the eggs, then
soothed the pain with a trip to Andy's Frozen Custard. Yum!
The perfect ending to a perfect weekend.

Welcome, Baby Ezra!

Many of you will remember Baby Zoe and his struggles early in life. Many more may remember my sister's brush with fame on ABC's Extreme Makeover: Home Edition.

I'm now happy to announce that Baby Zoe has a new little brother...Ezra Joel. Born a few weeks early, Ezra weighed in at 5 lb. 5 oz. He and mama are doing well.

Welcome, Baby Ezra! We can't wait to meet you!

Black Bean Chili-Stew

I realize that chili-eating season is almost over, and if you're like me, that makes you sad. One of my favorite things about winter is eating hearty soups and chili (especially with warm-from-the-oven bread!). But since those days are now numbered, I thought I should pull out a trusty ol' recipe that I hadn't had a chance to use yet this year.

I came up with this recipe a couple of years ago when I was scrounging through the pantry and fridge for something warm to cook up on a cold wintry night. Since I love black beans, I tried a new twist on and old fave...chili. It turns out pretty thick, so it's really more like a chili-stew. If you like your chili a bit more soupy, add more tomato sauce and adjust seasoning as needed.

Another reason I love it is because it is chocked full of veggies and my kiddos are non the wiser (but it does make the chili so pretty and colorful!). These are the veggies I typically use, but any veggies you have on hand would work. I hope you enjoy!

Hearty Black Bean Chili-Stew

2 cloves garlic

1 Tblsp olive oil

2 carrots, chopped

1 medium onion, chopped

1 green bell pepper, chopped

1 medium zucchini, chopped

1 lb ground beef

1 can tomato sauce

1 can diced tomatoes

2 15 oz can black beans (drained and rinsed)

1 pkg chili seasoning

Grated cheese to garnish

Heat oil in skillet, add ground beef and all vegetables. Cook till beef is no longer pink. Add tomato sauce, diced tomatoes, beans, and chili seasoning. Simmer 15-20 minutes. Serve with grated cheese and corn bread or over rice.

Serves 4-6
